Philippine Cocktail Fiesta Takes Over Solaire This November
Solaire Resort steps into the spotlight as the official host of the first-ever Philippine Cocktail Fiesta, a week-long celebration of world-class mixology and Filipino creativity running from November 17 to 23, 2025.
Presented by DrinkCollectiv and DBWY (Drinks Be With You), the festival brings together elite bartenders and top bars from across the Philippines and around the globe.
Guests can enjoy exclusive bar takeovers, hands-on masterclasses, and cocktail-paired dining experiences at Solaire Resort North and Solaire Resort Entertainment City, the central stages of this landmark event.
The Fiesta highlights the best of Filipino mixology while inviting international talent to share their craft and creativity. Nearly 100 bars across Metro Manila, including Makati, BGC, Quezon City, San Juan, Marikina, and Alabang, are participating. Solaire will host a curated lineup of international guest bartenders, making the resort the beating heart of this nationwide celebration.
At Solaire Resort North, the festivities kick off on November 17 at Skybar, where Cebu’s Lost Unicorn (John Park and Darrel de Garcia) will serve imaginative, boundary-pushing cocktails. On November 18, Hong Kong’s Antonio Lai of The Opposites takes over Quezon Club with his signature multisensory creations. On November 19, Finestra will host Nitin Tewari from India alongside Chef Tanisha Phanbuh of Tribal Gourmet for a five-course dinner expertly paired with cocktails that fuse Indian and Filipino flavors.
At Solaire Resort Entertainment City, the excitement continues with Bar Leone from Hong Kong on November 19, featuring a refined Italian five-course dinner by Chef Lorenzo Antinori at Finestra. Signature pairings include Scallop Carpaccio with Caviar and Green Peas complemented by the Herbert Highball, and Pan-Fried Duck Liver with Cherry Reduction and Onion Jam Bun matched with the Margarita de Maiz. The dinner concludes with Salted Caramel Pudding with Candied Carrot and Balsamic Caramel, paired with the rich Caffè Paradiso cocktail. The evening continues with a late-night bar takeover at BRB.
The lineup continues with Modern Haus from Jakarta at BRB on November 20, followed by Lavantha from Kuala Lumpur on November 21, each bringing innovative global flavors and inventive cocktails. On November 22, Manu from Siargao takes over the Pool Bar & Grill with tropical, island-inspired creations, and the celebration concludes on November 23 with Side Car from India at BRB, offering bold and sophisticated cocktails to close the week.
